Our Top 5 Meals for Summer

5 Recipes we are LOVING for summer

Is it just us or was that a looooong winter? As the weather warms up and the days get longer, we naturally start to crave fresh, bright, colourful meals. Here are Brooke and Han's top 5 go-to healthy, delicious summery meals for you to enjoy. 

Chicken Satay Bowl - Anything satay gets a big tick of approval from us! This bowl is packed full of brightly coloured vegetables and the sauce is so so yummy. If you not into eating meat, tofu or tempeh work perfectly instead. 

Loaded Sweet Potatoes - Here is your meat-free Monday meal sorted. It’s quick, easy, filling and delicious. I personally love to add a few corn chips and guacamole on the side and if you’re having this later on in the week, maybe a margarita?

Tuna Edamame Rice Bowls - This is the kind of meal that just screams summer. It’s so quick and easy to prepare and leaves you feeling full but not heavy. This is a great one if you’re having friends over (hint, if you use microwave rice there will be barely any dishes). 

Crispy Skin Salmon with Pearl CousCous - I’ve made this a few times and it’s such a perfect midweek meal. The couscous keeps really well and works for lunch the next day with some fresh rocket and feta. 

Breakfast Bowl - Even though this is called a Breakfast bowl, it makes for such a great lunch or dinner during summer. It’s fresh, healthy and delicious and so quick to prepare. I’m all for breakfast any time of the day, you could add some haloumi or a tin of tuna to make it even more filling.
